I heart the color green. So much so that every time I go food shopping, my refrigerator transforms into an edible St. Patty’s day parade.
Green apples, kale, zucchini, celery, limes, and cucumbers dominate the shelving and leave very little room for the rest of the rainbow.
With so many gorgeous and naturally festive foods such as these, I see little reason to make St. Patty’s day anything but healthy. So instead of celebrating the luck of the Irish with the usual pre-parade suspects (Green kegs, bagels, and eggs), I plan to use the contents of my emerald icebox to prepare a “pint” or two of my delicious Lucky you green juice.
For those of you who get an instant gag reflex when hearing the words “green” and “juice” used together in the same sentence, don’t!
